Chickpea Omelet

Ingredients
  

  • 1 cup Chickpea Flour
  • 1 cup Water
  • 1 tbsp Yeast nutritional
  • ¼ tbsp Turmeric
  • ¼ tbsp Black Salt or regular salt
  • Black Pepper fresh and grounded
  • Coconut Oil or olive oil

Instructions
 

  • In a small bowl, whisk together all ingredients except oil.
  • Set aside for a few minutes.
  • Warm a large nonstick saute pan over medium-high heat.
  • Lightly grease the surface with oil.
  • Pour half of the batter into the saute pan.
  • Cook for about 5 minutes on the first side, then the other.
  • Repeat this process one more time (you’ll have two omelets when you’re done).
  • Enjoy immediately on its own or with a side of your choice.
  • Hot sauce, salsa, guacamole, sliced tomatoes, or a lightly dressed salad pair nicely with this dish.

Notes

PREP TIP: If you’re using a small pan, you may need to do upward of 4 batches of this recipe.
STORAGE TIP: These will keep for 3 days in the refrigerator.
