Spinach kootu without coconut

SPINACH WITH LENTILl, SOUTH INDIAN NO COCONUT VERSION

My mother in law taught me to cook spinach without coconut. The final kootu ( gravy) is homogenous, full of protein due to lentils and avoids fat from coconut.

I use the bunch right the very same day
Getting ready with Insta Pot on Saute mode
My favorite onion cutter
Set IP on Saute, mine is a mini pot
Add urad, red chilies and onion
Add Turmeric
Add tuvar dal
Add a water cup for dal
Set on IP for 10 mins Manual
Special trick – Mix Milk and Flour
Mix this to spinach gravy and ready

Equipment

Insta Pot

Ingredients

  • 1 bunch Spinach
  • 1/2 cup Tuvar dal
  • 1 tpsp Oil
  • 1/2 Onion optional
  • 1 cup Water
  • 3 tbsp Milk
  • 2 tbsp Flour Wheat or All purpose

Tempering ingredients

  • 1 tsp Mustard
  • 1 tsp Urad
  • 3 Red Chilies

Instructions

  • Set InstaPot on Saute. Heat oil and add tempering ingredients
  • Add Onion ( optional) and turmeric
  • Once ingredients are roasted, stop sauté mode. Add Spinach and tuvar dal
  • Add water and set IP on Manual for 7 mins ( mins is 6 qt)
  • Once pressure settles, open and add milk flour paste
  • Set again on saute for mixture to thicken and enjoy.

Notes

Eat with rice side
I double the above and use 2 bunches of spinach on weekends
