Savory Steel-Cut Oats

Ingredients
  

  • 1 cup Oats steel cut
  • 2 cups Vegetable Broth
  • 1 tablespoon Olive Oil or coconut oil
  • 1 Onion chopped,
  • 2 Garlic Cloves minced, salt,
  • ½ tbsp Dried Thyme
  • ½ tbsp Rosemary dried
  • Black Pepper

Instructions
 

  • In a small saucepan, bring the oats and the vegetable broth to a boil.
  • Then reduce to a simmer, stirring regularly.
  • Cook for about 20 minutes or until the steel-cut oats are nice and thick.
  • Meanwhile, warm the oil in a small saute pan over medium heat.
  • Add the onion, garlic, and a big pinch of salt, reduce the heat to low, and cook until the onions begin to caramelize, 15-20 minutes.
  • Add the onion mixture to the steel-cut oats and mix it all together.
  • Give it a taste and season with salt and pepper, if desired.

Notes

NUTRITION TIP: Feel free to bulk up the oatmeal with the addition of some avocado slices and chopped cherry tomatoes. They’ll add extra fiber and flavor!
STORAGE TIP: Store in an airtight container in the refrigerator for up to 5 days.
