Greens on Toast with Tofu Ricotta

Ingredients
  

  • 2 slices Ezekiel Bread or 1 Ezekiel English muffin
  • 1 tablespoon Olive Oil or coconut oil
  • 2 Garlic Cloves minced,
  • 4 cups Greens your choice,
  • 1/2 cup Lemon Juice
  • Salt
  • Black Pepper freshly ground
  • Tofu Ricotta

Instructions
 

  • Toast the Ezekiel bread or English muffin.
  • Meanwhile, warm the oil in a small saute pan over medium heat.
  • Add the garlic and cook for 1 minute,
  • Add greens and lemon juice and cook for 3 minutes or until the greens are nicely wilted.
  • Season with salt and pepper.
  • Spread about 2 tablespoons of tofu ricotta on each slice of toast, and then top with even amounts of greens.
  • Crack a bit of pepper over them if desired and enjoy right away.

Notes

NUTRITION TIP: Swap the Ezekiel toast for a rice cake or a lower carb option. Or skip the carbs altogether and just have tofu ricotta with greens.
STORAGE TIP: This is best enjoyed immediately; however you can make the greens ahead of time. They can be stored in the refrigerator for up to 5 days.
