
Greens on Toast with Tofu Ricotta
Protein, greens, healthy carbs, plus loads of flavor.

Ingredients
- 2 slices Ezekiel Bread or 1 Ezekiel English muffin
- 1 tablespoon Olive Oil or coconut oil
- 2 Garlic Cloves minced,
- 4 cups Greens your choice,
- 1/2 cup Lemon Juice
- Salt
- Black Pepper freshly ground
- Tofu Ricotta
Instructions
- Toast the Ezekiel bread or English muffin.
- Meanwhile, warm the oil in a small saute pan over medium heat.
- Add the garlic and cook for 1 minute,
- Add greens and lemon juice and cook for 3 minutes or until the greens are nicely wilted.
- Season with salt and pepper.
- Spread about 2 tablespoons of tofu ricotta on each slice of toast, and then top with even amounts of greens.
- Crack a bit of pepper over them if desired and enjoy right away.
Notes
NUTRITION TIP: Swap the Ezekiel toast for a rice cake or a lower carb option. Or skip the carbs altogether and just have tofu ricotta with greens.
