Ingredients
- 2 Cucumber Large ( Sliced)
- 1 Chickpeas can (15 oz), drained and rinsed
- 1 Red Onion medium ,finely chopped
- 2 Carrot Medium,shredded
- 1 cup sprouts (alfalfa, mung bean, or your choice)
- 1/2 cup vegan cheese crumbles (optional)
- 1 Lemon Juice
- Salt and freshly ground black pepper to taste
- 2 tbsp Olive Oil (optional)
Instructions
- Slice the cucumbers and finely chop the red onion.
- Shred the carrots and rinse the sprouts.
- Drain and rinse the chickpeas.
- In a large bowl, combine the sliced cucumbers, chickpeas, chopped red onion, shredded carrots, and sprouts.
