Ingredients
  

  • 2 Cucumber Large ( Sliced)
  • 1 Chickpeas can (15 oz), drained and rinsed
  • 1 Red Onion medium ,finely chopped
  • 2 Carrot Medium,shredded
  • 1 cup sprouts (alfalfa, mung bean, or your choice)
  • 1/2 cup vegan cheese crumbles (optional)
  • 1 Lemon Juice
  • Salt and freshly ground black pepper to taste
  • 2 tbsp Olive Oil (optional)

Instructions
 

  • Slice the cucumbers and finely chop the red onion.
  • Shred the carrots and rinse the sprouts.
  • Drain and rinse the chickpeas.
  • In a large bowl, combine the sliced cucumbers, chickpeas, chopped red onion, shredded carrots, and sprouts.
  • If using, sprinkle the vegan cheese crumbles over the salad.
  • Drizzle the lemon juice over the salad. Add salt and freshly ground black pepper to taste.
  • If desired, add 2 tablespoons of olive oil for extra richness.
  • Toss everything together until well combined.
  • Serve immediately or refrigerate for a few hours to allow the flavors to meld.
