Paneer
- 4 tbsp Tandoori masala
- 1 1/2 tsp Red Chili Powder
- 2 tbsp Oil
- 500 g Indian cottage cheese (paneer), cut into thick rectangles
- Oil for grilling
Spicy Cilantro Yogurt Sauce
- 1 Jalapeno
- 1/3 cup Coriander
- 1/4 tsp Pepper
- 1 tbsp Extra Virgin Olive Oil
- 1 tbsp Lemon Juice
- 1/2 cup Yogurt
- Salt to taste
Mango Salsa
- 2 Mango chopped
- 1/4 - 1/8 cup Onion finely chopped
- 1/4 cup Coriander finely chopped
- 1 Jalapeno finely chopped
- 1 Small Red Pepper chopped
- 1 1/2 - 2 tbsp Lemon Juice
- Salt to taste
Tacos
- 14-15 Tortillas
- 3/4 cup Purple Cabbage sliced
Prepare the Paneer
In a bowl, mix tandoori masala, red chili powder, and 2 tbsp oil.
Add the paneer rectangles and coat them evenly with the spice mixture.
Heat oil in a grill pan over medium heat.
Grill the paneer pieces until they are golden brown and crispy on all sides. Set aside.
Make the Spicy Cilantro Yogurt Sauce
In a blender, combine jalapeño, coriander, pepper, EVOO, lemon juice, and yogurt.
Blend until smooth.
Add salt to taste and mix well.
Prepare the Mango Salsa
In a bowl, combine chopped mangoes, onions, coriander, jalapeño, and red pepper.
Add lemon juice and salt to taste.
Mix well and set aside.
Assemble the Tacos
Warm the tortillas in a pan or microwave.
Place a few slices of grilled paneer on each tortilla.
Add a spoonful of mango salsa on top.
Drizzle with spicy cilantro yogurt sauce.
Garnish with sliced purple cabbage for an extra crunch.
