- 1 Cauliflower medium, head of cauliflower
- 1 cup White Vinegar
- 1 cup Water
- 1 tbsp Salt
- 1 tbsp Sugar
- 3 Garlic Cloves Sliced
- 1 tsp Black Peppercorns
- 1 tsp Mustard Seeds
- 1 tsp Coriander Seeds
- 1/2 tsp Red pepper flakes adjust to taste
- 1 Bay Leaves
- 1-2 Chilli Pepper sliced (optional for extra heat)
Prepare the Brine
In a saucepan, combine white vinegar, water, salt, and sugar.
Bring to a boil, stirring until the sugar and salt are dissolved. Remove from heat.
Pack the Cauliflower
Place cauliflower florets into a clean, sterilized jar.
Add garlic slices, black peppercorns, mustard seeds, coriander seeds, red pepper flakes, bay leaf, and sliced chili peppers.
Add the Brine
Pour the hot brine over the cauliflower, ensuring all florets are submerged.
