Ingredients
  

  • 1 Cauliflower medium, head of cauliflower
  • 1 cup White Vinegar
  • 1 cup Water
  • 1 tbsp Salt
  • 1 tbsp Sugar
  • 3 Garlic Cloves Sliced
  • 1 tsp Black Peppercorns
  • 1 tsp Mustard Seeds
  • 1 tsp Coriander Seeds
  • 1/2 tsp Red pepper flakes adjust to taste
  • 1 Bay Leaves
  • 1-2 Chilli Pepper sliced (optional for extra heat)

Instructions
 

Prepare the Brine

  • In a saucepan, combine white vinegar, water, salt, and sugar.
  • Bring to a boil, stirring until the sugar and salt are dissolved. Remove from heat.

Pack the Cauliflower

  • Place cauliflower florets into a clean, sterilized jar.
  • Add garlic slices, black peppercorns, mustard seeds, coriander seeds, red pepper flakes, bay leaf, and sliced chili peppers.

Add the Brine

  • Pour the hot brine over the cauliflower, ensuring all florets are submerged.
  • Let the mixture cool to room temperature.

Refrigerate

  • Seal the jar and refrigerate for at least 24 hours to allow flavors to develop. For best results, wait 2-3 days before serving.
