Ingredients
  

  • 2 cup Mixed Salad Greens (lettuce, spinach, arugula)
  • 1 Cucumber diced
  • 1 Red Bell Pepper sliced
  • 1 Yellow Bell Pepper sliced
  • 1 cup Cherry Tomatoes halved
  • 1 Carrot grated
  • 1/2 Red Onion thinly sliced
  • 1 cup Purple Cabbage shredded
  • 1 cup Corn Kernels (fresh or thawed frozen)
  • 1/4 cup Pumpkin Seeds
  • 1/4 cup Feta Cheese crumbled (optional)
  • Salt and freshly ground black pepper to taste

For the dressing

  • 3 tbsp Extra Virgin Olive Oil
  • 2 tbsp Lemon Juice
  • 1 tsp Dijon Mustard
  • 1 Clove garlic minced
  • 1 tsp Honey optional
  • Salt and pepper to taste

Instructions
 

  • In a large salad bowl, combine all the prepared vegetables: mixed greens, cucumber, bell peppers, cherry tomatoes, carrot, red onion, purple cabbage, and corn.
  • In a small bowl, whisk together all the dressing ingredients until well combined.
  • Drizzle the dressing over the salad and toss gently to coat all the vegetables.
  • Sprinkle pumpkin seeds and crumbled feta cheese (if using) over the top.
  • Season with salt and freshly ground black pepper to taste.
