- 2 cup Mixed Salad Greens (lettuce, spinach, arugula)
- 1 Cucumber diced
- 1 Red Bell Pepper sliced
- 1 Yellow Bell Pepper sliced
- 1 cup Cherry Tomatoes halved
- 1 Carrot grated
- 1/2 Red Onion thinly sliced
- 1 cup Purple Cabbage shredded
- 1 cup Corn Kernels (fresh or thawed frozen)
- 1/4 cup Pumpkin Seeds
- 1/4 cup Feta Cheese crumbled (optional)
- Salt and freshly ground black pepper to taste
For the dressing
- 3 tbsp Extra Virgin Olive Oil
- 2 tbsp Lemon Juice
- 1 tsp Dijon Mustard
- 1 Clove garlic minced
- 1 tsp Honey optional
- Salt and pepper to taste
In a large salad bowl, combine all the prepared vegetables: mixed greens, cucumber, bell peppers, cherry tomatoes, carrot, red onion, purple cabbage, and corn.
In a small bowl, whisk together all the dressing ingredients until well combined.
