Ingredients
  

  • 1 Yellow Pumpkin medium-sized, peeled, cubed
  • 1 Bell Pepper yellow, chopped
  • 2 tbsp Olive Oil
  • 2 Bay Leaves
  • 3 Garlic Cloves minced
  • 1 Onion medium-sized, chopped
  • 1 tsp Black Pepper
  • 2 tbsp Cornflour (cornstarch)
  • Salt to taste
  • 1 tbsp Butter (optional, for richness)
  • 4 cups Water or vegetable broth

Instructions
 

Prepare the Vegetables

  • Start by peeling and cubing the yellow pumpkin and chopping the yellow bell pepper, onion, and garlic.

Sauté the Aromatics

  • In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, and bay leaves. Sauté until the onions become translucent and fragrant, about 5 minutes.

Cook the Pumpkin and Bell Pepper

  • Add the cubed pumpkin and chopped bell pepper to the pot. Sauté for a few minutes to combine the flavors, then add the black pepper and salt to taste.

Add Water and Simmer

  • Pour in the water (or vegetable broth) and bring the mixture to a boil. Reduce the heat and let it simmer until the pumpkin becomes tender, about 15-20 minutes.

Blend the Soup

  • Once the vegetables are tender, remove the bay leaves and use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a blender in batches.

Thicken the Soup

  • In a small bowl, mix the cornflour with a little water to make a slurry. Add this to the soup while stirring continuously to thicken it. Let it cook for another 5 minutes.

Add Butter

  • For a rich, creamy texture, stir in the butter. Adjust salt and pepper as needed.

Serve and Enjoy

  • Ladle the soup into bowls and serve hot, garnished with fresh herbs like parsley or cilantro for added flavor and color.
