- 1 cup Lentils rinsed
- 1 Sweet Potato large-sized, peeled and diced
- 1 Onion medium sized, chopped
- 3 Garlic Cloves minced
- 1 inch ginger grated
- 1/4 cup Cashews soaked for creaminess or use as garnish
- 1 tsp Ground Cumin
- 1/2 tsp Turmeric Powder
- 1/2 tsp Paprika
- 4 cups Vegetable Broth or water
- 1 tbsp Olive Oil or coconut oil
- Salt to taste
- Pepper to taste
- Cilantro or parsley (optional) for garnish
