Ingredients
  

  • 1 cup Sweet Corn Kernels fresh
  • 3 cups Water (or vegetable stock for added flavor)
  • 1/2 tsp Pepper (adjust to taste)
  • 1 tbsp Cornflour (mixed with 2 tbsp water to create a slurry)
  • 2 tbsp Scallions finely chopped (green onions) (reserve greens for garnish)
  • 1 tbsp Celery finely chopped
  • 1 tbsp Oil
  • Salt to taste

Instructions
 

Prepare the Sweet Corn

  • Reserve ¼ cup of corn kernels for garnish. Blend the remaining kernels with ½ cup of water to make a smooth paste.

Sauté Aromatics

  • Heat oil in a pot over medium heat. Add the chopped scallions and celery, sautéing until fragrant and slightly softened.

Cook the Base

  • Add the blended sweet corn paste and remaining water (or vegetable stock). Stir well and bring to a gentle boil.

Thicken the Soup

  • Stir in the cornflour slurry and mix continuously to avoid lumps. Simmer until the soup thickens slightly, about 5 minutes.

Season and Garnish

  • Add salt and pepper to taste. Stir in the reserved corn kernels for texture.
  • Garnish with scallion greens before serving.
