With hearty chickpeas, creamy avocado, and fresh spinach wrapped in a whole wheat tortilla, it’s a wholesome meal that comes together in minutes.

Ingredients
  

  • 15 oz Chickpeas or 1 can, drained and rinsed
  • 1 tsp Olive Oil
  • 1 tsp Cumin
  • 1/2 tsp Paprika
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 2 cup fresh spinach
  • 1 Avocado riped and sliced
  • 4 whole wheat tortillas

Instructions
 

  • Heat olive oil in a pan over medium heat. Add chickpeas and spices. Sauté for 5–7 minutes until chickpeas are crispy and fragrant. Remove from heat.
  • Warm the whole wheat tortillas in a dry pan or microwave.
  • Layer each tortilla with fresh spinach, spiced chickpeas, and avocado slices.
  • Wrap tightly, slice in half, and serve immediately.
