- 15 oz Chickpeas or 1 can, drained and rinsed
- 1 tsp Olive Oil
- 1 tsp Cumin
- 1/2 tsp Paprika
- 1/4 tsp cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 cup fresh spinach
- 1 Avocado riped and sliced
- 4 whole wheat tortillas
Heat olive oil in a pan over medium heat. Add chickpeas and spices. Sauté for 5–7 minutes until chickpeas are crispy and fragrant. Remove from heat.
Warm the whole wheat tortillas in a dry pan or microwave.
Layer each tortilla with fresh spinach, spiced chickpeas, and avocado slices.
Wrap tightly, slice in half, and serve immediately.
