Ingredients
  

  • 1/4 cup Green Beans chopped
  • 1/2 tsp Black Pepper freshly ground
  • 1/2 cup Fresh Coriander Leaves finely chopped
  • 1 tsp Olive Oil
  • 1 Lemon Juice
  • 1/2 cup Cabbage shredded
  • 1/4 cup Corn Kernels
  • 1 tsp Ginger grated
  • 3 Garlic Cloves minced
  • 1 Onion finely chopped
  • 1/2 cup Carrots chopped
  • 4 cups Water or vegetable broth
  • Salt to taste

Instructions
 

Sauté the Aromatics

  • Heat olive oil in a pot over medium heat.
  • Add minced garlic, grated ginger, and chopped onion. Sauté until fragrant.

Cook the Vegetables

  • Add chopped carrots, green beans, cabbage, and corn kernels. Stir-fry for 2-3 minutes.
  • Pour in 4 cups of water or vegetable broth and bring to a boil.

Simmer and Season

  • Reduce the heat and let the soup simmer for 5-7 minutes until the vegetables are tender.
  • Stir in black pepper, salt, and half of the chopped coriander leaves.

Add Lemon and Coriander

  • Turn off the heat and mix in the fresh lemon juice.
  • Garnish with the remaining coriander leaves for an extra burst of freshness.

Serve and Enjoy

  • Pour into bowls and serve hot. Pair it with whole-grain toast or a light salad for a complete meal.
